my boys LOVE banana bread.  all three of my boys!  i often buy bananas JUST to let them go bad so that i can make this recipe.  this bread gets RAVE reviews from anyone who eats it.  i promise, this recipe is a keeper.

i have no idea where my recipe for our banana bread originally came from.  it’s been in my recipe notebook for years.

ingredients:

  • 1 cup mashed bananas {i do find that the banana bread has the best flavor when i let the bananas get really over ripe instead of prematurely using the bananas.}
  • 1 cup sour cream
  • 1/4 cup butter or margarine {i use salted butter}
  • 1 and 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

directions:  

preheat over to 350 degrees F.  grease and flour one 9×13 inch pan or two 7×3 inch loaf pans.  {i personally use mini loaf pans & this recipe makes 6-7 mini loaves}

combine banana and sour cream.  set aside.  in a large bowl, cream together the butter and sugar until smooth.  beat in the eggs one at a time, then stir in the vanilla and banana mixture.  combine the flour, baking soda, baking powder and salt; stir into the banana mixture.  spread the batter evenly into the prepared pan or pans.

bake for 50 minutes in the preheated oven, or until toothpick inserted into the center of the bread comes out clean.  {for the mini loaf pans i set the timer for about 30 minutes and just watch the bread}

with all of the blackberries that we have picked out of our front yard, i have been pinning blackberry recipes left and right. this one in particular, from the lazy daisy kitchen, caught my eye.  blackberry butter.  why yes, i would LOVE to make some of that.  the recipe is simple, pretty and oh so delicious.

ingredients:

1 pound salted butter, softened

1/8 cup of honey

1/2 cup blackberries

directions:

whip together butter and honey until fluffy.  add in berries and mix in short bursts until desired look is achieved.  if storing in jars, scoop into jar and wipe mouth clean.  cap and refrigerate.
